Apple and Honey (Ukraine Edition)


Like pretty much everyone I am feeling shocked and powerless as events in Ukraine unfold. Having reviewed where my supplies come from, there is nothing from Russia. I’m even on a green energy tariff, so I don’t think I’m using any Russian gas. So I’ve decided all I can really do is make some chocolates…

I have returned to a flavour I first made around 2 years ago as part of my VE Day collection, commemorating the contribution of the USSR to the Allied cause. The three largest republics in the USSR were Russia, Belarus and of course Ukraine. The former close relationship between these nations is part of the justification Putin gives for his actions, and just adds to the tragedy of Russia’s invasion. Apple and Honey cakes are popular throughout Eastern Europe. My take on them involves an apple pate de fruit, topped with a honey ganache, enrobed in Vietnamese dark milk chocolate and decorated, this time around, with a Ukrainian flag.
