One of our younger fans is Nathan. Last time he was in he was nagging me about making a chocolate for his birthday in September. He wanted a caramel fudge decorated with something Harry Potter related. I'm always looking for flavour inspiration, so against my better judgement I have relented and made what he wanted. Almost.... I drew the line at a Harry Potter theme. But the caramel fudge came out rather delicious. Unfortunately this will only encourage him, so who knows what he will ask for next!!!
To make the caramel fudge I used demerara sugar rather than normal sugar, giving it a lovely rich caramel flavour. This was then dipped it in a 35% milk chocolate and decorated it with a pearl of our best selling gold chocolate.
