Parkin - if you are not familiar with it, it is a traditional Northern cake that's made with oatmeal, molasses, and ginger.
My version consists of an oaty flapjack layer and a layer of dark chocolate, ginger and molasses ganache. All dipped in more delicious Belgian dark chocolate.
Ingredients
