Salt and Pepper Pistachio Truffles
Pistachio is one of my favourite nuts, and one that I haven’t used in any truffles up to now. In another first, this is the only rolled truffle in my range to date, in this case the truffle is rolled in chopped pistachio. Pistachio is one of those nuts that is dramatically improved with a bit of salt, and a subtle bit of pepper gives the chocolate a mild warm kick that adds an extra dimension to the flavour. These came out a little bit bigger than planned, but I’m sure no one’s going to complain about getting a bit of extra chocolate! Salt and Pepper Pistachio is my September limited edition micro-batch flavour.
