Introducing the first flavour from our selection inspired by holidays at the seaside – Salt/Water. This is one of the first flavours I created, and has been a favourite of mine and my many taste-testers over the years.
The bottom layer is a water based dark chocolate ganache. The top layer is a ganache of white chocolate and sea-salted caramel. The fillings are enrobed in Belgian milk chocolate from the island of Vanuatu in the South Pacific. The use of dark, milk and white chocolates gives a complex flavour profile that evolves over time. The shell shape reflects the influence of the sea, as does our promo shot taken on Rock-a-Nore beach in Hastings overlooking the English Channel. Available in October 2019.
