Apple and Honey
The fourth nation we have taken inspiration from for our VE Day 75th Anniversary Collection is the USSR. The USSR suffered more casualties than any other nation in the war. It is a cliche with some truth to it that WWII was won with British intelligence, American steel and Russian blood. Russia has historically tended to use honey as a sweetener, making honey cakes particularly popular there. Apples are also widely used in Russian cooking, so I have taken the delicious honey ganache that I use in my Honey and Almond chocolates, and replaced the nougat layer with a layer of apple pate de fruit. The piece is then enrobed in milk chocolate and decorated with a white chocolate USSR flag.
