Seaside Rock
£0.00A dark chocolate mint ganache with sugar crunch enrobed in Belgian dark chocolate and topped with a stripy white chocolate square Seaside Rock is part of our Seaside Selection, a range of chocolates taking inspiration from childhood holidays by the coast. Rock has to be one of the defining treats for our coastal towns. I didn’t realise how British it was until I took some into work as a post-holiday present and got very confused looks from the Europeans on my team at the time. It clearly had to be included in our Seaside Selection but proved to the trickiest recipe to get right. I tried including actual chunks of seaside rock, but that just went unpleasantly sticky. So I tried to replicate some of its main characteristics instead. With mint flavouring, some ground-up hard crack sugar for crunch and a brightly coloured stripes pattern on top you get the best parts of the rock experience, without the sticky fingers and bits of chewy rock stuck in your teeth for hours. Winner!

Chocolate Fudge
£0.00Chocolate fudge enrobed in Belgian dark chocolate Chocolate Fudge is part of our Seaside Selection, a range of chocolates taking inspiration from childhood holidays by the coast. Who doesn’t love fudge? It is a classic tourist treat and if other seaside towns are anything like Hastings it seems to be on sale in every other shop along the front. Ours is firm, like a Scottish tablet, as I like my fudge to have a bit of bite. We add chocolate to the fudge because we like chocolate. Then we cut it into cubes and dip it in Belgian dark chocolate because, did I mention we like chocolate? This will never pass for health food but we are all allowed to treat ourselves occasionally aren’t we?

Vanilla Ice Cream Cone
£0.00A layer of white chocolate and feuilletine topped with a layer of white chocolate and vanilla ganache, enrobed in white chocolate and decorated with hundreds and thousands Vanilla Ice Cream Cone is part of our Seaside Selection, a range of chocolates taking inspiration from childhood holidays by the coast. A trip to the seaside wouldn’t be the same without an ice cream cone. In this chocolate we reproduce the ice cream experience without having to worry about it melting... or about brain freeze! A layer of white chocolate and feuilletine represents the cone, and a layer of vanilla ganache is the ice cream. It is all dipped in Belgian white chocolate and a sprinkle of hundreds and thousands rounds out the seaside experience. Unlike most of our chocolates, I think these are best enjoyed chilled, but not out of the freezer. Rich, creamy, and very moreish!

Salt/Water
£0.00A layer of sea-salt caramel and white chocolate ganache with a layer of dark chocolate water ganache, all enrobed in Belgian milk chocolate Salt/Water is part of our Seaside Selection, a range of chocolates taking inspiration from childhood holidays by the coast. This is one of the earliest recipes I invented and it has long been a favourite of me and my many taste-testers. I can’t deny that it was partly inspired by the pun of having a salted ganache and a water-based ganache to create a recipe based on salt water, but when a recipe works this well who cares where the inspiration came from! The bottom layer is a dark chocolate water ganache, which allows the rich chocolatey flavour to come through. The top layer is a ganache of white chocolate and sea-salted caramel. The whole chocolate is then enrobed in Belgian milk chocolate from the islands of Vanuatu. The use of dark, milk and white chocolates gives it a distinctive and complex flavour profile that evolves while the chocolate is being eaten. Given the name and the inspiration a shell shaped mould was the only choice.

Honey and Almond
£0.00A layer of honey and almond nougat and a layer of honey ganache, enrobed in Belgian milk chocolate and topped with toasted almonds We consider honey to be an under-used and under-rated flavour in chocolates so we were keen to include a honey-based recipe in our initial range. We love nougat so pairing the honey with almond was an easy decision. This chocolate has a layer of honey and almond nougat at the bottom to give it a bit of texture. On top of that is a layer of beautifully smooth honey ganache. We then enrobe the chocolate in a Belgian milk chocolate sourced from the South Pacific islands of Vanuatu, add a couple of toasted almond flakes for decoration, and it is ready to enjoy.

Hazelnut Swirl
£0.00A dark chocolate hazelnut praline embedded with caramelised hazelnut nibs and enrobed in Belgian dark chocolate Hazelnuts are a classic pairing with chocolate so I had to include a recipe with them in our initial range. In these chocolates I created a hazelnut praline, which is nuts boiled in sugar then blended to a smooth paste. To add a bit of texture some caramelised hazelnut nibs are mixed in with the praline. The praline is presented in a Belgian dark chocolate shell in the classic swirl pattern. These chocolates are vegan friendly. I am sure you will be nuts about them!

Dark Truffle
£0.00Our classic vegan dark chocolate truffle, a water ganache of Belgian dark chocolate enrobed in a shell of the same Belgian dark chocolate These chocolates could not be much simpler. Dark chocolate, sugars, water... and nothing else. A water-based ganache of Belgian dark chocolate is made with demerara sugar to give it a hint of caramel and molasses. The ganache is then dipped in Belgian dark chocolate and decorated with a classic double ridge. A pure and deep chocolate hit. And vegan friendly too.

Cola Cups
£0.00A cola flavoured milk chocolate butter ganache, enrobed in Belgian milk chocolate from the islands of Vanuatu and topped with popping candy Cola Cups are part of our Seaside Selection, a range of chocolates taking inspiration from childhood holidays by the coast. I have always been a big fan of a certain red-coloured Cola brand. As a child I was only allowed cola on holidays so it was an obvious choice for our Seaside Selection. For me Cola and chocolate is a natural flavour pairing so I've always been surprised that it is not used more often. I have tried a cola caramel made by chocolatier Guillaume Vincent and at the more budget end of the market Cadbury’s used to include cola in one of their Marvelous Creations range, but that is about all I have come across. Well Coastal Cocoa are here to remedy that! The cola is included in a milk chocolate butter ganache to make it extra rich and smooth. The shell is made from Belgian milk chocolate sourced from the Vanuatu islands in Oceania. And to give it that cola fizz, it is topped with some popping candy. As a certain red brand would put it – welcome to the Cola Cup side of life!

Cinnamon Doughnut
£0.00Milk chocolate truffles with a delicious doughnut and cinnamon flavoured filling topped with cinnamon pearl sugar Cinnamon Doughnut is part of our Seaside Selection, a range of chocolates taking inspiration from childhood holidays by the coast. Freshly made doughnuts rolled in cinnamon sugar are a staple of the British seaside experience so we had to have a go at reproducing them for the Seaside Selection. For these chocolates we make our own doughnuts then blend them up with some cinnamon and nutmeg and mix them with a Belgian milk chocolate ganache. These are rolled into balls and dipped in more Belgian milk chocolate before being topped with a few pieces of cinnamon pearl sugar to give a little bit of crunch. We did try making them into a doughnut shape. It didn’t work. Luckily the doughy chocolate combination works a treat and makes a unique addition to our range.

Blackberry and Vanilla
£0.00A layer of blackberry pâte de fruit and a layer of vanilla ganache enrobed in white chocolate I knew I wanted a white chocolate with fruit as part of the Coastal Cocoa range but was not initially thinking of blackberries. A trip to my local park revealed the most amazing crop of blackberries this year so after getting permission from the Council it was time to get foraging. The blackberries have been made into a pâte de fruit (basically thick jam with a French name) and to complement them I have added a thin layer of vanilla ganache. They are then dipped in Belgian white chocolate and decorated with some purple dots (which are meant to look a bit berry like!) Fruity, creamy and rich, these have become one of my favourite flavours. And I'm sure they will be one of yours too.

Our Seaside Selection is inspired by childhood holidays on the coast. For my first special collection of chocolates I wanted something with strong personal meaning to me. We are based in Hastings, a classic British seaside town (hence our name!), so I was keen to come up with some flavours that reflected this. You’ll be glad to hear I rejected seafood and decided to create a selection based on my memories of childhood holidays on the coast. With a mixture of dark, milk and white chocolates there is something for all tastes. This is a range of unique flavours that you won’t find anywhere else. A couple of these have already become firm favourites of mine, and I’m sure you will find the same. Prepare to be transported…. can you hear the waves yet?
